Today's Australian cuisine is some of the most diverse available anywhere, due to the many cultural influences. Modern Australian cuisine has been heavily influenced by the country's South East Asian neighbours, and by the many waves of immigrants from there, and all parts of the world. Similarly, Greek, Lebanese and Italian influences are common. Fresh produce is readily available and thus used extensively, and the trend (urged by long-term government health initiatives) is towards low-salt, low-fat healthy cookery incorporating lean meat and lightly cooked, colourful, steamed or stir-fried vegetables. Traditional "high culture" gains small attention from much of the population, it thrives nevertheless, with excellent galleries (even in surprisingly small towns); a rich tradition in ballet, enlivened by the legacy of Dame Margot Fonteyn and Sir Robert Helpmann; a strong national opera company based in Sydney; and good symphony orchestras in all capital cities--the Melbourne and Sydney symphony orchestras are said to be worthy of comparison with any. The Australian Capital Territory was created at the chosen site of the capital city Canberra in an area called the Molongo River Valley. Canberra was founded as a compromise between the two largest cities, Melbourne and Sydney. The name 'Canberra' is derived from the indigenous Ngunnawal language, which is loosely translated into English as "meeting place". Australia may have been sighted by Portuguese sailors in 1601, and Dutch navigators landed on the forbidding coast of modern Western Australia several times during the 17th century. Captain James Cook claimed it for Great Britain in 1770. At that time, the native population may have numbered 300,000 in as many as 500 tribes speaking many different languages. The Aboriginal population currently numbers more than 300,000, representing about 1.7% of the population. Since the end of World War II, efforts have been made both by the government and by the public to be more responsive to Aboriginal rights and needs. Australian flora, in order to cope with the extreme conditions present in much of Australia, has evolved to cope with a common set of conditions, namely the ubiquitous presence of fire; soils low in nutrients (due to a lack of recent - geologically speaking - volcanic activity); and a lack of water. Although education is not a federal concern, government grants have aided in the establishment of numerous state universities including the University of Sydney (1850), the University of Melbourne (1853), the University of Adelaide (1874), the University of Tasmania (in Hobart, 1890), the University of Queensland (in Brisbane, 1909), and the University of Western Australia (in Perth, 1911). Sydney's most famous landmarks are the Sydney Harbour Bridge and the Sydney Opera House, both of which are located on Sydney Harbour. Sydney's principal river is the Parramatta River, which enters Sydney Harbour from the west. While the Harbour is famous for its racing yachts, the Boxing Day start of the Sydney to Hobart Yacht Race and 18ft skiffs, the river is used for dinghy sailing and rowing as well as recreational boating, racing small yachts, recreational fishing, and occasional Dragon Boat racing. The land that is now Australia was first discovered by Europeans in 1522 by the Portuguese explorer Cristóvão de Mendonça, but it was only in the 17th century that the island continent became the subject of European exploration, with several expeditions sighting Terra Australis: The Dutch explorer Willem Jansz (1606), the Portuguese explorer Luis Vaez de Torres in Spanish service (1607), and the Dutch explorers Jan Carstensz (1623), Dirk Hartog and Abel Tasman (1642), after whom is named the island of Tasmania, but which he himself originally named after Anthoonij van Diemenslandt.
