Today's Australian cuisine is some of the most diverse available anywhere, due to the many cultural influences. Modern Australian cuisine has been heavily influenced by the country's South East Asian neighbours, and by the many waves of immigrants from there, and all parts of the world. Similarly, Greek, Lebanese and Italian influences are common. Fresh produce is readily available and thus used extensively, and the trend (urged by long-term government health initiatives) is towards low-salt, low-fat healthy cookery incorporating lean meat and lightly cooked, colourful, steamed or stir-fried vegetables. Australian language is contradictory: it combines a mocking disrespect for established authority, particularly if it is pompous or out of touch with reality, with a distinctive upside-down sense of humour. For instance, Australians take delight in dubbing a tall man "Shorty", a silent one "Rowdy" a bald man "Curly", and a redhead, of course, is "Blue". Since 1996, the Coalition government, led by Prime Minister John Howard, has continued to implement microeconomic reform policies. Some have claimed that the deregulation of the labour market during this period has resulted in a needed flexibility in the labour force. Others have criticised these deregulations as having a negative impact on worker's wages, safety and health grounds. Legislation introduced during this period sought to reduce union involvement and power, and has preferred to emphasise enterprise bargaining (a tendency towards wage bargaining). Also during this period, the Coalition government deregulated numerous other industries, including the telecommunications sector, and privatised many of the pre-existing natural monopolies. Sydney is a significant global and domestic tourist destination and is regularly declared to be one of the most beautiful and livable cities in the world, admired for its harbour, beautiful coastline, warm and pleasant climate and cosmopolitan culture. Sydney significantly raised its global profile in recent years as the host city of the 2000 Summer Olympics. The city's name is pronounced "SID-nee". The ABC has made an impressive contribution to television drama with immensely popular series like "Brides of Christ" and in comedy, with the 1970's hits "Aunty Jack" and "The Norman Gunston Show" and most recently "Kath & Kim". As one would expect from a city its size, Melbourne contains all manner of pubs, bars, and nightclubs. The CBD contains a wide variety of venues, from the ubiquitous faux-Irish pubs proliferating around the world, to some very upmarket establishments (such as the Supper Club, which offers all manner of exclusive wines at exclusive prices), serious jazz venues on Bennetts Lane, fashionable nightclubs and dance venues, and massive pickup joints (of which The Metro on Bourke Street is perhaps the biggest). Australia's economic development was slow at first and based on the export of wool. This all changed with the discovery of gold in 1851 and mining has, overall, been the most important sector of the Australian economy. By the late 20th century, Australia had a prosperous Western-style mixed economy, with a per capita GDP on par with the four dominant Western European economies. In recent years, the Australian economy has been resilient in the face of global economic downturn, with steady growth. Rising output in the domestic economy has been offsetting the global slump, and business and consumer confidence remains robust. Australia's emphasis on reforms is another key factor behind the economy's strength. In the 1980s, the Labor Party, led by Prime Minister Bob Hawke and Treasurer Paul Keating, played a crucial role in modernizing Australia's economy. Chinese and Asian restaurants provide eat-in and takeaway services, and once again they cover the gamut from Europeanised 'faux' Asian food (soggy sweet-and-sour chicken) to the authentic. Most Australians prefer the genuine article, and the number of high-quality Asian restaurants is increasing. Van Diemen's Land (i.e. the present day Tasmania) was settled in 1803, and became a separate colony in 1825. The rest of the continent, what is now Western Australia, was formally claimed by the United Kingdom in 1829. Following the spread of British settlement, separate Colonies were created from parts of New South Wales: South Australia in 1836, Victoria in 1851 and Queensland in 1859. The Northern Territory was founded, as part of the Colony of South Australia, in 1863. Violet Crumble is an Australian chocolate bar that is manufactured in Sydney, Australia. The slogan for the chocolate bar is "It's the way it shatters that matters". The chocolate bar is a crumbly honeycomb-like substance coated in chocolate, made from ingredients like sodium bicarbonate (baking soda), gelatin, glucose syrup and emulsifiers.
